I’ve been trying to start meal prepping for a long time. My husband and I have very busy schedules, and even though I work from home I often find myself forgetting to eat because there’s no food in the house. Well, no prepared food, but that has all changed. We did our first meal prep 2 weeks ago and it was great. We adopted the mini prep plan and are healthy, yummy food for a week. I love this idea and this book is a great jumping off point. Erin makes it so simple and her recipes are delicious! I look forward to improving my meal prep skills and making it easier to eat healthy during the week.
